Cedar Plank Salmon

It’s the start of grilling season! Why not change up your salmon dinner with this delicious, yet simple recipe. Cooking your fish or seafood on a cedar plank adds an amazing flavour, and a good way to impress your guests.

Ingredients

Cedar grilling plank, big enough to fit your salmon filet or multiple planks
4 Salmon fillets, or 1 large piece of salmon
2 Lime, sliced
2 Lemon, sliced
A bunch of thyme
A bunch of rosemary
1 Garlic clove, minced

Most grocery stores carry cedar grilling plants. With any untreated plank, you have to soak it first to prevent the wood from burning when putting it on the grill. You’ll want to soak it for minimal of 2 hours to overnight, I usually do it for 6-8 hours. Soak the plank in a baking dish big enough to fit the plank or a clean sink. I use a large can or tomato sauce jar to weigh it down to make sure the entire board is submerged under water.

After soaking in water, dry off the board as much as you can. Pat dry the salmon and ensure there are no bones. Drizzle olive oil on the plank and placed the salmon on the board, skin side down, seasoned it with your favourite seasoning. (see below for some of my favourites)

Pre-heat your grill to 400°F. Once the grill has heated, place the cedar plank on indirect heat on the grill, close the lid and cook for 15-20 minutes. Check on salmon every so often and keep a spray bottle with water close by just in case the plank catches fire. You’ll know when the salmon is cooked when you can flake off a piece with a fork, or with an internal temperature of 145°F.

Served the salmon on the plank for a real show stopper, but be mindful the plank is hot wood and should handled with care.

Cedar Plank Seasoning Ideas:

Lemon & Herb – Drizzled olive oil on the top of the board, and lay a bed of lemon slices, lime slices, rosemary and thyme. Place the salmon on top of the the bed of lemons and lime. Mix a few tablespoons of olive oil, chopped rosemary, thyme and garlic, salt and pepper. Add the herb mixture on top of the salmon and top with lemon slices.

Mexican – Mix your favourite taco mix, like El Paso Taco Mix, with some olive oil and lime juice. Spread the mixture on top of the salmon. Once cooked, garnish with lime and cilantro.

Grainy Mustard – Spread a layer of grainy mustard on top of the salmon.

Maple-Glazed Ginger – Add a few springs of green onion on the board. Place the salmon on top of the onions. Mix ½ cup of maple syrup, 2 tablespoons of soy sauce, 1 minced garlic clove, 2 tablespoon grated ginger, season with salt & pepper. Spread the maple-glaze on the salmon. Once cooked, garnish with green onion slices.
