It’s Taco Tuesday!!! Here’s a delicious twist on your standard taco night that takes less than 30 minutes. Be careful not to add too much chipotle Chile, those babies are HOT!
Yesterday, I got 3 more recipes down. My family came to visit from out of town and I invited them to be my guinea pigs. These recipes were very time consuming, but what else do you have to do on a Sunday afternoon?! You make garlic bread and homemade ravioli from scratch!
Day two of my recipe challenge, I was fortunate I was able to combine two recipes together… what else would you serve with a steak sandwich? A nice spinach salad with bacon and mustard dressing!
Yesterday was the commencement of my Cookbook Challenge. In the spirit of the Super Bowl, not that I’m a huge football fan but you gotta watch it, I started off the challenge with Big British Meatballs. I must admit, I had a couple fails due to my lack of attention…. I may have forgotten to get certain ingredients and had to improvise…
- Black Current Jam – I used Blueberry Jam
- Malt Vinegar – regular vinegar
- English Mustard – I thought it was grainy mustard.. oops!
Regardless, it came out pretty delicious! I now understand why meatballs in gravy are a British comfort food.
This recipe was simple enough, but there were a lot of steps. It did take me 2 hours from start to end. I like to do my prep at the very beginning, that way when it comes time to cook, I don’t need to do any chopping and what not. Next time, yes there will be a next time for this recipe, I’m going to put larger chunks of cheese in my meatballs, and buy the right ingredients. So far, my challenge is going well, it’s only been 1 day, but I like to be hopeful!

Some of the cheese oozed out.. but still so good!
Jamie Oliver’s Big British Meatballs – looks pretty close!
