I was looking for an other way to cook sweet potatoes, and came across this recipe. I loved it! It’s easy, simple and very taste. Goes very well with Pork.
INGREDIENTS
1 large Onion, diced
4 slices Bacon, chopped
2 large Sweet Potatoes peeled, cut into bite-size chunks
2 Apples, chopped
¼ cup Apple Juice
1tsp Ground Cinnamon
¼ cup Chopped Pecans

DIRECTIONS
Pre-heat oven to 375°F. Cook bacon in large skillet, on medium heat, for about 5 minutes. Add onions and cook until onions and bacon are crisp-tender.
Place potatoes a large bowl and add the apples, apple juice, cinnamon, mix until well coated. Place mixture in an oven-safe baking dish sprayed with cooking spray. Top with onion mixture; cover.
Bake for 40 minutes. Top with pecans and bake an additional 15 min. or until potatoes are tender and most the liquid is absorbed.
Serve with Pork Tenderloin and Roasted Broccoli
