Salmon Mousse Cucumber Cups
Great party favorites! and very impressive!
1 English Cucumber, unpeeled
2 ounces Smoked Salmon
4 ounces Cream Cheese, softened
2 tbsp Heavy Cream
1-1/2 tsp Horseradish
1 tsp Lime zest & juice
Salt and Pepper to taste
1 tbsp of Fresh Dill and extra for garnish
Cut cucumber crosswise into 1-1/2-inch slices, then cut these slices diagonally. Scoop out centers with a melon baller leaving 1/4-inch walls.
In a food processor, combine cream cheese, heavy cream, horseradish,dill, lime zest, lime juice, salt, pepper and smoked salmon.
Fill cups with this mixture, garnish with dill and serve.
