So this is maybe one of the FIRST meals I actually made, probably around 3 years ago. I was so proud of myself and to make things even easier for me (as a beginner), Kraft Foods even has a video of a girl making this! It’s pretty easy, and very good.
Ingredients
1 can Italian-style diced tomatoes, undrained
1-1/4 cups Shredded Mozzarella Cheese
1/4 cup chopped fresh basil
1 pkg. Stuffing Mix for Chicken
8 small Boneless skinless chicken breast
1/3 cup Roasted Red Pepper Italian with Parmesan Dressing
What To Do
Heat the oven to 350ºF.
Mix the tomatoes, 1/2 cup cheese and basil in medium bowl and add stuffing mix; stir just until moistened.
Place 2 chicken breasts in freezer-weight resealable plastic bag; pound to 1/4-inch thickness. Remove from bag; place, top-sides down, on cutting board. Repeat for the rest of the chicken.
Spread chicken with stuffing mixture and roll the chicken breasts up; place, seam-sides down, in a baking dish. Drizzle with dressing.
Bake 40 min. or until chicken is done. Sprinkle with remaining cheese; bake 5 min. or until melted.
