I love Mexican night at my house. Every once in a while, I like to change it up. Here’s a healthy recipe with loads of flavor. I even made my own tortillas. Enjoy!
INGREDIENTS
For the Salmon:
1 tbsp. Paprika
1 tbsp. Cumin
1 tsp. Chipotle Chili Powder
1/2 tsp. Salt
4 Salmon Fillets
Package of Tortillas or Homemade Tortillas
Sour Cream
For the Salsa:
1 medium Avocado, peeled and diced
1 medium Mango, peeled and diced
1 cup Tomatoes, seeded and diced
1/4 cup fresh Cilantro, chopped
1 tbsp Olive Oil
Juice of 2 Limes
Salt & Pepper, to taste
DIRECTIONS
Preheat oven at 400F.
Gently combine the avocado, mango, tomatoes, cilantro, 1 tablespoon oil, and 1 tablespoon lime juice in a large mixing bowl. Season salsa to taste with salt and pepper and set aside at room temperature, gently tossing occasionally.
Combine the paprika, cumin, chipotle and sea salt to make the rub. Generously season the salmon with the rub.
Lightly grease a baking dish and place the salmon fillets inside, skin side down. Cook for about 12-15 minutes. Remove salmon from heat and set aside to cool for a few minutes. Flake the salmon with a fork for serving.
Place salmon on tortilla, top with salsa and sour cream – serve with a side of Mexican Rice.
