Great addition to Mexican Night!
1 tbsp Olive Oil
1/2 cup Onion, sliced thin
2 Garlic Cloves, minced
1 cup Brown Rice
1 cup Chicken Broth
1/2 cup Water
1/8 cup Lime Juice
1 cup Cilantro, chopped
In large pan heat oil under medium heat. Add onion and sauté for 3 minutes. Add garlic and sauté 30 seconds.
Add white rice and stir very often for 6-8 minutes. Add water and broth, bring to a boil. Cover, turn to lowest setting and do not remove lid for 15 minutes.
Remove from heat and fluff with fork. Add in lime juice and cilantro. Cover and let sit for 5 minutes. Fluff with fork again and serve hot.
Note: If you want some heat, add diced jalapeño in with the garlic.
