Slow Cooker Lemon & Thyme Pork Roast

What I love about my slow cooker is that it does the work for me.  I go home at lunch, throw everything in my cooker, let it do its magic and dinner is ready by the time dinner rolls around.  All I need to worry about is my salad and what wine I want to drink with dinner.  This recipe was the best pork I have ever made!  It was tender, flavourful, moist and downright easy!

INGREDIENTS

1 Pork Loin Roast
1 Red Onion, roughly chopped
1 bad of Baby Potatoes, washed & halved
1 pkg of Flavourful Lemon Thyme Pork Recipe Mix by Club House
¼ cup Olive Oil
½ cup White Wine
Salt & Pepper, to taste

DIRECTION

Place the potatoes and onions at the bottom of your slow cooker, and season with salt and pepper.  Pour wine on top.

Mix the olive oil and the lemon & thyme mix together, and rub all over the roast.  Place the roast on top of the potatoes.

Place lid and cook on HIGH for 5-6 Hours.

Remove the pork and potatoes, keeping the sauce separate.  Slice the pork and serve.  You can use the sauce to pour over the meat if desired.
