Taco Salad

This is a fun easy meal.  You can use any taco filling you like, place it on a bed of lettuce, and eat it out of an edible bowl. Here’s a simple way to do it.

Ingredients

1 lbs lean gound beef
3 cups lettuce, chopped
1 tomato, diced
1 red onion, diced
1 small can of corn, drained
1 green bell pepper, sliced
2 Old El Paso Taco Seasoning pouches
1 cup shredded cheese
1 cup salsa
1 cup sour cream
1 lime
4 large tortilla shells
Ranch dressing

Directions

Pre-heat your oven at 375F.

Heat a few teaspoons of olive oil in a pan and sautéed the pepper with ¼ of the onion on medium-high heat. After 5 minutes, add ¼ of the one of taco seasoning pouches and ¼ cup of water. Reduce the heat and cook for another 5-10 minutes. Transfer the peppers to a bowl.

Using the same pan, heat a few teaspoons of olive oil in a pan on medium-high heat. Add the corn, ¼ of the taco seasoning and ¼ cup of water. Reduce the heat and cook for another 5 minute. Transfer the corn to a bowl.

Meanwhile, in a large pan, cook the ground beef and ¼ of the onion on medium-high heat until the beef is no longer pink. Add a full pouch of the taco seasoning and 1 cup of water. Reduce the heat and let the sauce thicken. Set aside.

To make the taco bowls, lightly crumple 4 piece of aluminum foil into individual balls (about the size of a softball). Place the balls on a large cookie sheet, and spray the balls with non-stick cooking spray. Lay each tortilla wrap over a ball, they should droop downwards and hang over the balls. Spray the top of the tortillas with cooking spray and bake in the oven for 10-15 minutes, until the tortillas are toasted. Remove the tortillas from the balls and flip them over, you should have 4 taco bowls!

Zest the lime and juice half the lime. Add both the zest and lime juice to the sour cream and mix well. Cut the remaining half of your lime into wedges.

To assemble:
Place a taco bowl on a plate or shallow bowl. Start with the lettuce and drizzle some ranch dressing over the salad. Next add some of the beef mixture. Top your salad with the remaining toppings: corn mixture, peppers, onion, salsa, sour cream and cheese. Garnish with the lime wedges..

Topping Ideas:

Spice it up by adding jalapeños or hot sauce
Use ground turkey instead of beef
Add some guacamole or sliced avocados
Use a Mexican or lime flavoured rice as a bed instead in lettuce
Add black beans to the corn mixture
Garnish with cilantro
