Everyone loves a good Tiramisu, but why not make it great by adding some strawberries?! And I SWEAR there are no calories in this dessert! Lol
INGREDIENTS
1 1/4 cups Strawberry Jam (I only use Grandma’s homemade jam!)
1/3 cup Orange Liquor
1/3 cup Orange Juice
4 tbsp of Coffee Liquor
1 container of Mascarpone Cheese, room temperature
1 1/3 cups Whipping Cream
1/3 cup Sugar
1 tsp Vanilla
24 Ladyfingers, give or take
1 cup Brewer Coffee, the stronger the better
1 lbs Strawberries, sliced
DIRECTIONS
Whisk jam, orange liquor and orange juice in bowl. Place mascarpone cheese and 2 tablespoons coffee liquor in large bowl; fold just to blend. Using electric mixer, beat cream, sugar, vanilla, and remaining 2 tablespoons coffee liquor in another large bowl to soft peaks. Stir 1/4 of whipped cream mixture into mascarpone mixture to lighten. Fold in remaining whipped cream.
Spread 1/2 cup jam mixture over bottom of a glass baking dish. Quickly dip the a ladyfinger in the coffee and arrange enough ladyfingers over strawberry mixture to cover bottom of dish.
*Note: Make sure dip the ladyfingers one at a time and immediately place it in the dish, do not leave ladyfingers soaking in the coffee, they will be soggy. The coffee is just to moisten them, not turn them into mush
Spoon 3/4 cup jam mixture over ladyfingers, top with a layer of sliced strawberries, then spread 2 1/2 cups mascarpone mixture over. Repeat layering with remaining lady fingers, jam mixture, strawberries and mascarpone mixture. Cover with plastic and chill at least 8 hours or overnight.
Slice remaining strawberries. Arrange over tiramisu and serve.
