Chicken Bowtie Pasta with Pesto Tomato Cream

A combination of some of my favorite ingredients. This dish is very simple and quick. Bon appetit!
Keep in mind that I don’t cook with recipes and my measurements are approximations of what I used.

2 Chicken Breast, boneless and skinless
1 box of Bowtie Pasta
1/2 Onion, chopped
1Garlic Clove, minced
1/2 cup Marinated Kalamata Olives
1/2 cup Sundried Tomatoes, sliced
2 tbsp Pesto
3/4 cup Tomato Sauce
1/4 cup Heavy Cream
2 handfuls of Baby Spinach
Olive Oil
Salt & Pepper to taste


Season and cook chicken breast either in a pan, oven or grill. Cook pasta as directed and drain.

Meanwhile heat a tbsp of oil in a large skillet. Add the onions and garlic, cook for 2 minutes. Mix in the pesto and cook another minute then the sundried tomatoes and olives. Add the tomato sauce and cream. Bring to a soft simmer until sauce thickens. Add the spinach and cook until spinachis wilted. Mix in the pasta until well coated with the sauce, cook 1 more minute.

Place pasta on serving dish, top with sliced chicken and serve.
