Oven Roasted Brussels Sprout with Bacon

I love me some Brussels sprouts steamed as they are with a little butter and salt and pepper… Unfortunately the hubby doesn’t. But once I added some bacon, a little garlic, honey and grainy mustard, it’s like he forgot he was eating those “yucky” vegetables.


INGREDIENTS
2lbs Brussels sprouts
4-5 slices of Bacon, diced
1/2 large Red Onion, sliced
2 tbsp Olive Oil
6 cloves Garlic, minced
2 tbsp Grainy Mustard
2 tbsp Honey
1 tsp Smoked Paprika
½ tsp Sea Salt
½ tsp freshly cracked black pepper

Preheat oven to 425F. Trim the ends off the Brussels sprouts and cut them in half. Place them in a large mixing bowl along with the onion. Sprinkle bacon over the sprouts.

In a seperate container, mix olive oil, garlic, mustard, honey, smoked paprika, salt and pepper. Mix until very well combined and pour over reserved sprouts and bacon. Mix to coat evenly and spread in a single layer in a shallow baking dish sprayed with cooking oil.

Place in the oven and bake for 25-30 minutes, turning once or twice, until the sprouts are tender and golden and the bacon is crispy.
