Healthy Corn Flakes Crusted Cod

An easy way to get healthy fish and chips is to use Corn Flakes rather than a heavy batter.  The prep is easy, and the results are delicious!  Enjoy!

 INGREDIENTS

  • 5 cups Corn Flakes
  • Salt & Pepper, to taste
  • 1 Egg
  • 1 tbsp Lemon Zest
  • 1 bunch Fresh Dill, chopped
  • 2 tablespoons fresh lemon juice
  • 1 1/2 lbs Cod Fillets

DIRECTIONS

Preheat oven to 425°F. Spray a large baking pan with cooking spray or line with nonstick aluminum foil.

Season the cod with salt and pepper, and drizzle with lemon juice.

Put the Corn Flakes in a large Ziploc bag and seal, removing as much air as possible.  Using a rolling-pin, crush the Corn Flakes to desired size.  The smaller they are the better they will stay.  You can also do this using a food processor.

Place Corn Flakes in shallow dish adding the lemon zest and the dill. In another bowl, whisk the egg and 1 tablespoon. Dip the cod in the egg mixture, and dredge in the Corn Flakes mix, coating completely.

Arrange fish in a single layer in the pan and coat top of fish lightly with cooking spray. Bake 12 to 15 minutes or until crisp and browned. Serve with lemon wedges.
