Potato Salmon Cakes

Instead of trying to make Crab Cakes, I wanted to try something different – therefore I went to the Potato Salmon Cakes.  These turned out pretty good!

INGREDIENTS

1 lbs Salmon Fillet
4 Large Potatoes
2 Eggs, Beaten
1 tbsp Dijon Mustard
2 Green Onions, Chopped
All Purpose Flour
Olive Oil

DIRECTIONS

I seasoned the Salmon Fillet with salt and pepper and seared it in a pan until both sides were golden brown and cooked through.

I peeled, boiled and mashed the potatoes.

I then added the salmon, green onions, Dijon, eggs and salt and pepper and mixed the mixture until it was smooth.

I made them into patties and coated dusted them with flour.  Sautéed the patties in a pan until they were gold brown on each side.

Served with tartar sauce – Delish!
