It’s Taco Tuesday!!! Here’s a delicious twist on your standard taco night that takes less than 30 minutes. Be careful not to add too much chipotle Chile, those babies are HOT!
INGREDIENTS
- 1 Pork Tenderloin
- 1 ½ tsp Lime zest
- 1 tbsp Lime juice
- 2 tsp Oregano
- 1 tsp Brown Sugar
- 2 tsp Chipotle Chile in Adobo Sauce, chopped
- 2 tsp Garlic, minced
- Salt & Pepper
- 1 cup Onion, diced
- 2 tsp Olive Oil
- 8 Small Tortillas
- ¼ cup Sour Cream
- Cilantro, chopped
DIRECTIONS
Slice pork tenderloin into 1 inch pieces. Place a couple of slices into a large zip-lock bag and pound to ¼ inch thick pieces, remove from bag and slice into thin strips. Continue for the remaining of the slices. Place pork in a large bowl and add, lime zest and juice, oregano, brown sugar, chipotle chile, garlic and salt and pepper – mix well until the pork is well coated.
Heat a large skillet on medium-high heat. Coat with some oil and add onions. Cook for about 4 minutes and add pork and cook until the pork is no longer pink. Add cilantro and it’s ready to serve!
Warm the tortillas, add some pork mixture to the tortillas, top with sour cream and garnish with your favourite taco toppings!
