Herb-Crusted Sockeye Salmon

Looking for something quick?  Prep Time to Eating Time was under 30 minutes!  Who says you need to slave in the kitchen for HOURS to make a delicious meal!!  Great for weeknight dinners!

INGREDIENTS
½ cup bread crumbs
1 cup fresh parsley, finely chopped
2 tablespoons olive oil
Coarse salt and ground pepper
4 skinless salmon fillets
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice

DIRECTIONS
Preheat oven to 450 degrees.  Line a baking sheet with aluminum foil; set aside.  Combine bread crumbs, parsley, lemon juice and 1 tablespoon oil; season with salt and pepper.

Place salmon on prepared sheet; season with salt and pepper. Spread top of fillets with Dijon and top with parsley mix, pressing lightly into the salmon for it to stick.

Herb-Crusted Salmon (3)

Bake for about 11 – 13 minutes, until salmon is cooked to desired preference.
Serve with your favorite sides – I had a beautiful spinach salad and rice.
