INGREDIENTS
1 tsp Olive Oil1 cup Onion, finely chopped
1/2 cup Parsley, chopped
2 Garlic cloves, minced
1/2 cup Diced Tomatoes, drained
1 1/2 pounds Ground Beef, extra lean
1 cup Bread Crumbs
1 tsp Worcestershire sauce
1/4 tsp freshly ground Black Pepper
2 large Eggs
1/2 cup Ketchup
Cooking spray
Mashed Potatoes
4 cups Potato, peeled and cubed
1/4 cup 2% Milk
3 tbsp Butter
1/2 tsp Salt
1/4 tsp ground Black Pepper
3 tbsp Green onion, chopped
DIRECTIONS
Preheat oven to 350°.
Heat the olive oil in a large nonstick skillet over medium-high heat. Add chopped onion, parsley, and minced garlic; sauté 2 minutes and cool.
Combine onion mixture, tomatoes, and the remaining ingredients except cooking spray in a large bowl.
Spoon the meat mixture into 12 muffin cups coated with cooking spray. Top each with 2 teaspoons ketchup. Bake at 350° for 25 minutes or until a thermometer registers 160°. Let stand for 5 minutes.
While the meatloaf is cooking, make the mashed potatoes. Place potatoes in a large pot with enough water to cover. Cover and bring to a boil, reduce heat, and simmer 10 minutes or until tender. Drain. Place potatoes back into pot add milk and butter and mash with a masher until desired consistency. Add remaining ingredients; stir with a spoon.
Remove the meat loafs from the muffin pan, and top with potatoes.
*For something more fancy, you can pipe the potatoes with a piping bag and a large star tip.
