2 salmon filets
2 cups of green lettuce, roughly chopped
¼ cup blueberries
¼ cup pecans, halved
¼ red onion, sliced
Boursin Cheese (Shallot & Chive or Fig & Balsamic)
Kraft Fig Balsamic dressing
1 green onion, sliced
Pre-heat oven to 400ºF. Line a baking sheet with aluminum foil, and spray with Pam cooking spray and place the salmon skin side down. Season with salt and pepper, drizzle the salmon with the fig balsamic dressing. Cook for 12-15 minutes, until the salmon is cooked.
Divide the lettuce between two bowls. Add the desired amount of onion, pecans, and blueberries. Toss the salad with the fid balsamic dressing, and top with crumbled Boursin and salmon. Garnish with green onions.
