Steamed Mussels in Garlic Cream Sauce

Some people look at mussels as an appetizer, I can have them as my meal!! Mussels are a type of dish that you can enjoy so many different ways.  Tonight was in a White wine garlic cream sauce.  So other favorites of mine are: Spicy tomato sauce, Thai coconut cream, and Beer and bacon!

INGREDIENTS

1 lbs Fresh Mussels
2 tbsp Olive Oil
1 Celery Stalk, finely chopped
2 Shallots, finely chopped
5 Garlic cloves, minced
½ cup Parsley, chopped
1 ½ cups White Wine
¼ Cream

DIRECTIONS

Place the mussels in a colander in the sink and clean them well.

In a large pot, sautée the onions, garlic, celery and parsley – 3-5 minutes.  Add the wine, and bring to a boil.

Add the cream and mussels and cover.  Let simmer (without lifting the lid) for 8-10 minutes.  You’ll know they are ready then all the mussels have opened up.

Serve right away.  This was served with my Prosciutto-Wrapped Scallops and I always eat mussels with a baguette to dip in the sauce!
