A stir fry is a quick and easy meal. You can use a variety of different vegetables, make your own sauce or use your favourite store-bought sauce, and serve it with rice, rice noodles or pasta. The options are limitless!
INGREDIENTS
1 jar of your favourite teriyaki or stir fry sauce (see below for homemade sauce)
1 lb chuck steak, cut into strips
2 tablespoon vegetable oil
4 cups broccoli florets
1 red bell pepper, sliced
1 onion, sliced
1 package of rice noodles
1 green onion spring, sliced
Sesame seeds, as garnish (optional)
DIRECTIONS
In a medium pot, bring water to a boil on high heat.
In a medium bowl, toss steak strips with teriyaki or stir fry sauce.
Heat oil in a large skillet on medium-high heat. Remove the steak strips from the sauce and add to the pan, cooking for 4-5 minutes. Set remaining sauce aside. Once the beef is starting to brown, remove from the pan and transfer to a plate.
Add the onions, bell peppers, broccoli and a splash of water to the pan. Cook for 5 minutes or until broccoli is tender and liquid has evaporated.
Add the steak strips and the remaining sauce to the pan, making sure everything is well mixed together. Cook on medium-low heat for 2 minutes or until steak strips are cooked to your desired temperature.
Add rice noodles to the boiling water and cook for 2 minutes (or as indicated on the package). Drain the noodles, rinse well to keep noodles from sticking together, and drain again. Separate the noodles into the serving bowls.
Top the rice noodles with the beef mixture. Garnish with green onions and sesame seeds (optional)
Homemade Teriyaki Sauce
1/4 cup soy sauce
1/2 cup water
1/4 cup brown sugar
2 teaspoons minced garlic
2 teaspoons minced ginger
1 tablespoon of honey
1 teaspoon toasted sesame oil
1 tablespoon cornstarch
Mix soy sauce, water, brown sugar, garlic, ginger, honey and sesame oil in a small pot over medium high heat. Stir until sugar is dissolved, about 3 minutes. Turn up heat to high and bring to a boil.
Mix the cornstarch with 2 tablespoons of cold water until dissolved. Add the cornstarch mixture to the sauce and boil for 1-2 minutes or until sauce has thickened. Set sauce aside.
